Vignes Centenaires – Carignan

Vinified by the Ligneres family, Château La Baronne at Fontcouverte.
History
The estate takes its name from the mistress of the grounds: La Baronne Saint-Vincent. The Ligneres family are the owners since 1950. Since 2006, the management is taken care of by the 3 children, Geneviève, Paul and Jean. The organic culture started in 2007. The Ligneres have all studied medicine, La Baronne is their common passion.
Geography
The vineyards are located on the North side of “La Montagne Noire” (The Black Mountain) of Alaric, on a terroir constituted of fine clay limestone gravel.
Vineyard and Management
The vines are planted with a density of 4500 vines per hectare, they are Gobelet pruned and they were planted as early as 1905.
The vineyard is entirely organic.
Grape Variety
Parcel of Carignan 100%.
Vinification and Ageing
The harvest is exclusively by hand, in crates. The sorting of the grapes takes place in three steps: At the vine, before and after destemming. The traditional vinification takes place in truncated wooden vats with maceration for 25 days. The ageing lasts for 10 months with stirring of the lees in Darnajou barrels.
Tasting and Gastronomy
The robe is garnet with ruby tones. The nose is fruity and ripe. It opens up firstly to notes of fig and raspberry, and then opens up quickly on notes of small black fruit (blueberries). The palate is ample and harmonious, a rare finesse. The aromatic is intense, fruity with notes of spice, white pepper, coffee. The tannins are velvety. Perfect as an accompaniment throughout the meal, on cold meats, grilled or simmered, or even a solid starter.
Drink at: 16–18°C.
