Vinified by the Ligneres family, Château La Baronne at Fontcouverte.
History
The estate takes its name from the mistress of the grounds: La Baronne Saint-Vincent. The Ligneres family are the owners since 1950. Since 2006, the management is taken care of by the 3 children, Geneviève, Paul and Jean. The organic culture started in 2007. The Ligneres have all studied medicine, La Baronne is their common passion.
Geography
The vineyards are located on the North side of “La Montagne Noire” (The Black Mountain) of Alaric, on a terroir constituted of blue marl and clay limestone gravel.
Vineyard and Management
The Carignan vines are 50 years old, the Grenache vines are 20 years old and the Mourvèdre vines are 15 years old. The entire vineyard is certified organic agriculture. It is planted with a density of 4500 vines per hectare, and the yield is 25hl/ha. The vines are Gobelet and cordon de Royat pruned.

Vinification and Ageing
The harvest is exclusively manual and the grapes are sorted at three stages: at the vine, before and after destemming. The vinification takes place with indigenous yeast, in concrete and steel vats with 25 days of maceration. The ageing takes place in Darnajou barrels and in concrete vats with stirring of the lees for 10 months.
Tasting and Gastronomy
A garnet robe with ruby tones. The nose is empyreumatic. Firstly comes the herbacious notes, the nose then quickly opens up to notes of ripe black fruit (blackberry, prunes). The palate is full and suave. The aromatic is intense and fruity. The tannins are present and melted. Perfect as an accompaniment during the whole meal, on cold meats, grilled or stewed, or even a solid starter.
