Geography
The vines used for this cuvee are located between Narbonne and Montpellier.
The climate typically Mediterranean, is adapted to organic viticulture. The soil is principally composed of river deposits and calcarious clay.
Vineyard
The vineyard was restructured 30 years ago in large plots, which enables rational farming.
The vineyard is certified organic. The carignan are head pruned, syrah and merlot and grown in Royat pressing. The yield is limited to 70 hl per hectare.
Red grape-varieties
This wine is a blend of Merlot, Carignan and Syrah.
Wine-making and maturing
The grapes from organic agriculture are mechanically harvested and destemmed on arrival. Pre-fermentation cold maceration develops the aromas of red berries. Fermentation at low temperature (20°C) gives the wine its typicity and fruit. The wine is sweetened at 3 to 5g/L before bottling.
Tasting and food-pairing
