Harvesting by hand. Destemming. Temperature-controlled fermentation for approximately two weeks. Frequent but gentle pumping-over.
Tasting notes:
Palatable, supple wines lifted by fresh, not jammy fruits. Good balance and medium concentration. Red spices.
Food pairings:
Makes the perfect partner for cold, roast and grilled meats and Mediterranean vegetables.
