Domaine Combe de Sol
Producer
Jacques Ribourel has been the owner and producer of the Domaine de la Ramade since 2007. In parallel with his work as a winegrower, he also runs guest rooms in the heart of his vineyard in the ancient renovated buildings.
History or Origin
The denomination “Combe de Sol” comes from where the vines that produce this wine are situated. The term “Combe” indicates a wide valley, dominated on each side by steep slopes. And the term “Sol” signifies the Sun in Iberian. And so “Combe de Sol” literally defines this extraordinary space where the sun’s rays nourish and enrich each of the grapes present on the vine at the bottom of the valley.
Geography
This vineyard is located in the heart of the Clape massif, between Narbonne and the Mediterranean. We have a landscape of steep ravines, cliffs, garrigue and groves that cover the rocks. The Clape offers 300 days of sun per year with an average temperature of 14°C, a typically Mediterranean climate. The soil is composed of alternating layers of clay limestone, red earth with oxidised iron, grey or yellow marlstone or red or green sandstone.
Vineyard and Management
This vineyard has been converted to organic farming since 2012, the whole of the vines are irrigated by drop irrigation. The grape varieties present are: Merlot, Syrah, Mourvèdre, Marselan, Grenache Noir, Bourboulenc and a few rows of Vermentino.
Grapes Varieties
This wine is a blend of mainly Syrah and Grenache.
Vinification and Ageing
A wine storehouse of 100m² on three storage floors which facilitates organisation and optimises the space. Traditional vinification using gravity, robotic grape stomping, fermentation at controlled temperatures, long vatting periods, and gentle extraction. Aged in barrels.
Tasting and Gastronomy
This wine shows a deep ruby red robe, a nose of garrigue, grilled wood and empyreumatic notes (such as smoke flavours). On the palate it is full, ample with soft smooth spice. This wine will accompany perfectly grilled meats, grilled cuttlefish and cheeses.
