Vinified by the Ligneres family, Château La Baronne at Fontcouverte.
History
The estate takes its name from the mistress of the grounds: La Baronne Saint-Vincent. The Ligneres family are the owners since 1950. Since 2006, the management is taken care of by the 3 children, Geneviève, Paul and Jean. The organic culture started in 2007. The Ligneres have all studied medicine, La Baronne is their common passion.
Geography
The vineyards are located on the North side of “La Montagne Noire” (The Black Mountain) of Alaric, on a terroir constituted of blue marl and clay limestone gravel.
Vineyard and Management
The Carignan vines are 60 years old, the Grenache vines are 30 years old and the Syrah vines are 25 years old. The entire vineyard is organic with a density of 4500 vines per hectare for the Carignan, 3500 vines per hectare for the Grenache. The parcels are cultivated with Cordon de Royat and Gobelet.

Vinification and Ageing
The harvest is early and exclusively manual, in crates; the grapes are sorted at the vine, before and after destemming. The vinification takes place in steel, concrete and truncated wooden vats, with maceration for 25 to 30 days.
The ageing takes place for 14 months in Darnajou barrels with stirring of the lees.
Tasting and Gastronomy
Robe: Dark red with purple tones.
Nose: Intense with notes de leather, spices (clove, and cumin). Racy surprising aromas, a mix of notes of wild game and spices. A warm and dense structure.
Drink with grilled meat, fried forest mushrooms (boletus, girolle, chanterelle), omelette with truffles or beef tartar.
Serve at: 16–18°C
