History
The estate takes its name from the mistress of the grounds: La Baronne Saint-Vincent. The Ligneres family are the owners since 1950. Since 2006, the management is taken care of by the 3 children, Geneviève, Paul and Jean. The organic culture started in 2007. The Ligneres have all studied medicine, La Baronne is their common passion.
Geography
A terroir of fluviatile terraces of sandstone pebbles on clay limestone soil in Aude in the commune of Fontcouverte.
Vineyard and Management
The vines are planted with a density of 4500 vines per hectare. They are Golbelet pruned, with natural grass growth in two of 3 rows and 1 row laboured, intervine work is manual and mechanical. The average age of the vines is 20 years. The vineyard is organic.

Vinification and Ageing
The grapes are harvested by hand. The sorting takes place before destemming on vibrating tables (6 sorting machines). The maceration takes place for 4 days in wooden vats, then pouring and fermentation in barrels.
Tasting and Gastronomy
Robe: Intense golden yellow
Nose: Complex with notes of white flowers (white wall rocket) evolving to spicy-pepper notes. Typical and expressive aromas with a very marked intensity.
Palate: Round and powerful, with vanilla and floral aromas, intense and persistent length. Drink with chicken curry, cheese soufflé and game birds.
Serve at: 12–16°C
